Three small pours side by side simply teach your palate more in twenty minutes than a month of ordering the same cocktail ever will, because the differences between islands only become obvious when you can taste them back to back. What a flight looks like at a Jamaican rum bar in Miami

Start with the Caribbean Journey ($28). It runs three expressions from Jamaica, Barbados and Trinidad, which happens to be the clearest three-point map of rum you can build. Barbados is the opposite temperament: the birthplace of rum, blending pot and column still distillation into something elegant and balanced. Taste them from quietest to loudest and the logic lands on its own. Trinidad first, Barbados second, Jamaica last, because once those Jamaican esters are on your tongue they will flatten anything that follows. The esters are the part worth slowing down for. They read as overripe banana, pineapple skin and a little varnish, and that is exactly what a long pot still fermentation is supposed to produce. Some people fall for it immediately. The Agricole Experience ($32) goes to Martinique and Guadeloupe for rhum agricole, which is distilled from fresh sugarcane juice instead of molasses and carries an AOC designation. It tastes grassy, floral and driven by terroir, and it is the flight to order when you already know molasses-based rum and want proof that the category is bigger than you thought. It also surprises wine drinkers more than anything else on our list.

Aged & Rare ($45) is the one to save for later. Three premium selections at 12, 15 and 21 years, tasted in sequence, show you what time actually does to a spirit: the edges round off, the fruit turns into dried fruit, the finish stretches out. It is a lovely flight and a slightly wasted one if your palate has not yet learned what the base rum tasted like before the barrel got involved. Order a cocktail beside it, and something to eat

A flight is better with a cocktail next to it, because tasting a rum neat and then tasting it doing a job in a glass is where the whole thing clicks. Our Mai Tai ($17) is built on aged Jamaican rum with lime, orange curacao, orgeat and a dark rum float, so it is the obvious partner to the Jamaica pour. The Jungle Bird ($16) goes a different direction with blackstrap rum, Campari, pineapple, lime and simple syrup, and the Campari keeps the sugar honest. Anything on the cocktail menu is fair game, and every rum in the collection is also available as a neat pour or on the rocks if a flight leaves you curious about one specific bottle.

Eat something too. The Coconut Shrimp ($16) with mango chutney holds up next to high-proof pours, the Poke Bowl ($18) with ahi, avocado and ponzu is the lighter option, and the Tropical Ceviche ($16) comes with coconut milk, citrus, chili and plantain chips. None of it is a full dinner, which is rather the point. You came for the rum.

How to get a seat

The room holds 45 people, and that number explains most of how an evening here works. We are open Wednesday and Thursday 6PM to 1AM, Friday and Saturday 6PM to 2AM, and closed Sunday, Monday and Tuesday. Friday and Saturday regularly sell out a week or more in advance, so book early if your heart is set on a weekend.
